Banana Whole Meal Bread

Ingredients
Whole Meal Flour – 250g
Baking Powder – 2 tsp
Butter – 50g
Brown sugar – 80g
Salt – pinch
Eggs – 2
Ripe Banana – 4
Vanilla – 1 tsp
Pecans – 50g
Milk Chocolate (Valrhona Jivara 40%) – 80g
Instructions
1. Preheat the oven to 170 C.
2. Mix the dry ingredients (Whole meal flour, baking powder, salt, chocolate and pecans) set aside.
3. Mix butter (or oil) and sugar until combined.
4. Add the eggs + vanilla extract and continue mixing and add the mashed bananas.
5. Add the dry ingredients and fold together using a spatula until well combined.
6. Grease and line a baking tin with butter and parchment paper. Pour in the dough and top off with one sliced banana in half. Sprinkle some flakey sea salt and bake.
7. Place in the oven for 45 to 50 minutes.
8. Take out and let rest on cooling rack for 10 minutes before slicing
